 Characteristics: Matsu El Pícaro is a young red wine from the D.O. Toro made with Negra de Toro (Hare’s Eye) grapes from vines between 50 and 70 years old. This wine is made by Matsu Winery and is the result of a viticulture that does not interfere with natural processes, that allows itself to be guided by its cycles in the manner of biodynamic viticulture procedures.

Elaboration: For its elaboration, the harvest was carried out manually during the first fortnight of October and was transported in boxes and small trailers. Fermentation is then carried out in concrete tanks with a capacity of 15,000 kg, controlling that the temperature does not exceed 24ºC to maintain the freshness and fruit that characterizes this wine. As for the malolactic fermentation, it takes place in French oak barrels, once finished the wine is neither filtered nor clarified, thus trying to preserve its natural characteristics. Finally Matsu El Pícaro has a 3-month wooden step.

Tasting Notes:

  • View: Wine with a large layer and purple colour, which denotes its youth.
  • Aroma: It has an intense aroma in which black fruits stand out, such as blackberries and blueberries, dominating over red fruits and the mineral notes that also appear, resulting in a fresh, but complex wine.
  • Taste: In the mouth, the fruity sensations dominate, and a full-bodied wine is perceived, which at the same time leaves pleasant sweet sensations, contributed by the ripeness of the grapes from which it comes.

Pairing: Sausages, Aged cheeses, Pasta, Red meats, White meats

Service: It is recommended to serve it at a temperature of 15 ºC.




 Characteristics: Matsu El Recio 2021 wine comes from a selection of vines between 90 and 100 years old with an extremely limited production, cultivated following biodynamic techniques. It is a powerful and full-bodied wine, but at the same time easy to drink.Matsu El Recio 2021, produced by Winery Matsu, is a Red Wine of the D.O. Toro made with the best Tinta de Toro grapes, with 14 months in French barrels and with 14.5º of alcohol. Matsu means “to wait” in Japanese, and is perhaps the concept that best defines the philosophy that inspired the wines in this collection. It means waiting for nature to fulfil its times without trying to interfere or speed up the processes, common practice in the D.O. bull Wait for the wine to mark what it needs in each phase and wait for the right moment to be able to enjoy it.

Elaboration and Aging: Fermentation and maceration for 3 weeks in tanks of 15,000 kilos. Malolactic fermentation takes place in French oak barrels. Subsequent aging for 14 months.

Pairing: Rice, Game, Aged cheeses and Red meats

Service: It is recommended to serve it at a temperature of 16 ºC.




 Characteristics: Matsu el Viejo red wine is made with 100% Tinta de Toro. The vines are more than 100 years old, organically cultivated dynamically and with production. Manual harvest in the first fortnight of October.This wine the Major of the Matsu Trilogy represents the old wine grower, with the experience of old age to express his serenity, perseverance and fortitude… Like the wine itself.Matsu means “to wait” in Japanese, and it is perhaps the concept that best defines this wine, waiting for the wine to mark what it needs in each phase and waiting for the right moment to be able to enjoy it. Thus, Matsu El Vell is a wine that retains all the power and personality of Toro wines but with the smoothness and elegance of a contemporary wine.

· View: In view it has a cherry red colour, purple rim.

Pairing: It is particularly recommended for all kinds of meat.

Service: Serve this wine at a temperature between 16 º and 18 º, before being served it is recommended to decant it.
