The Awakening of the Vine: The Art of Pruning at Cavas Monells

Winter pruning is far more than a seasonal task; it is the first step in sculpting the quality that will eventually sparkle in your glass. At Cavas Monells, every cut is a mindful decision that bridges our land’s heritage with the future of our premium sparkling wines.
 

Shaping Excellence through Master Craftsmanship

Pruning allows us to shape the vine, ensuring the grapes ripen perfectly, caressed by the Mediterranean sun and the breeze. More importantly, it is how we regulate production. As producers under the D.O. Cava appellation, our vineyards are dedicated to Guarda Superior cavas (Reserva and Gran Reserva). To achieve this elite status, we limit our yields to 10,000 kg/Ha, ensuring each grape captures the purest essence of the terroir.
 

The Character of the Vintage: Sustainable and Dry-Farmed


 Following a year of generous rainfall, our vines have deep water reserves, and the winter chill is providing a healthy period of dormancy. At Cavas Monells, we never irrigate; our estates are dry-farmed and 100% sustainable.

We embrace the fact that every year the climate is different. This singularity defines the character and nuances of our long-aged cavas. It is nature, rather than human intervention, that dictates the personality of each unique vintage.

Closing the Loop: From Vine Shoots to Natural Fertiliser

After pruning, the vine shoots (sarmientos) are shredded and returned to the earth as organic fertiliser. We then plough the soil to aerate the land, preparing the vineyard for the new growth cycle which begins in mid-March with the “bleeding of the vine”. Seeing the sap flow from the pruning wounds is an extraordinary moment—it is the definitive sign that the vine has awoken from its winter slumber.
 

Honouring Our Heritage: 70-Year-Old Xarel·lo Vines

These days, we are focusing on a historic Xarel·lo vineyard over 70 years old. Pruning these ancient, gnarled vines is a true privilege.

· They have endured droughts, storms, and pests, yet they remain steadfast.

· While they produce fewer grapes, the oenological quality is unsurpassed.

· They are a legacy from our grandparents, representing the lifeblood of generations.

Preserving these old vines is how we honour our history. It is the magic of connecting youth with age through a glass of exceptional Cava.
