 Characteristics: It was 1972 when Cantine Paolini announced its first harvest, marking a milestone in the company’s history. From small plots, in addition to rows, the juicy Cataratto, Inzolia, Nero d’Avola and Frappato grapes are still carefully tended to give life to the wines of the 72 Filara line that has always represented the beginning of the new path .

Vinification: The pressing of the grapes is gentle and the alcoholic fermentation with maceration of the skins takes place at 27°C for approximately 11 days. Once malolactic fermentation has taken place, the wine matures for at least 12 months in tons and barrels, before moving to vitrified concrete tanks. The assembly is carried out after aging in barrels. It ages for 10-12 months in bottle to develop the bouquet.

Tasting notes:

· View: Ruby red colour with slight violet reflections.

· Nose: Complex, intense and spicy aroma with a fruity touch of wild strawberries, cherry, plum, mixed with light touches of red rose.

· Mouth: In the mouth it is rich, broad and velvety, with great structure and aromatic persistence with an acidic aftertaste, soft and balanced tannin that gives it a fresh acidity.

Pairing: Especially recommended to accompany complex first courses of meat and fish, white meats, grilled game. Vegetable couscous, risottos, meat rolls, country omelettes and duck stews.

Service: Expresses the best in large glasses with wide mouths and good height, excellent served at 18°C
