2532 – ROSÉ WINE CRESTISSIMO PERELADA NEEDLE FISHERMAN WINERY FROM D.O. EMPORDÀ
Characteristics: Since Miguel Mateu acquired Peralada Castle in 1923, three generations of the Suqué Mateu family have worked to demonstrate that the privileged geo-climatic conditions of the Empordà, thanks to its proximity to the Mediterranean and the extraordinary heterogeneity of the its soils were suitable for obtaining elegant wines, with structure and marked personality. A tradition that has its origins in the 14th century, when the Carmelite monks who lived in the monastery attached to the castle, already produced an excellent wine with which they supplied the entire region. This is how the cellars of Castell de Peralada were born and how, for three generations, the desire to show the winemaking tradition of the Empordà has been maintained. Currently, Javier Suqué Mateu, grandson of the founder, is in charge of keeping this spirit alive.

Varieties: 100% Muscat of Alexandria
Preparation: 2nd fermentation using the Charmat method.
Designation of Origin: D.O. Emporda
Alcohol content: 7% Vol.
Bottle type and Capacity: Flute, dead leaf colour of 75 Cl.
Tasting notes:
· View: Very pale yellow colour with slight greenish tones. Clear and bright. With release of fine bubbles.
· Nose: Clean and fruity aroma, very expressive of the Muscat variety.
· Palate: Taste of fresh fruit, good balance, long, tasty and persistent in the mouth.
Pairing: Steamed, boiled or grilled fish or seafood. It is also a good accompaniment to marinated fish and seafood, in ceviche or raw. They are ideal wines for fresh cheeses. Also for salads and raw vegetables. Try seasoning them with citrus fruits and aromatic herbs.
Service: Optimal temperature between 4 and 6 ºC.
