2520 – VI NEGRE VD’O 2.16 CARINYENA D’OLIVARDOTS – D.O. EMPORDÀ
Characteristics: From the “Varietals de Terrer” collection, the Vd’O 2 wine is the first wine of the D.O. Empordà and the 13th in Catalonia that Incavi grants the “Qualified Finca Wine” qualification.It is the highest recognition that can be given to a wine. This distinction implies unique, qualitative and climatic characteristics for grape wines from the same estate, which follow the most demanding protocols by the D.O. in terms of production and performance. This qualification recognizes both national and international prestige over 10 years.
Elaboration and aging: Made with the best grapes from old vines from the “Hort d’en Riera” estate planted in 1909 on sandy soil, located in the municipality of Capmany (Alt Empordà) at about 90 m above sea level sea level with north orientation.
Vinification: Manual collection in 10 kg boxes, carrying out a first selection of the best grapes in the vineyard and a second in the cellar, grain by grain on a sorting table. Cold pre-maceration (2-4ºC) followed by controlled fermentation at a temperature of 26ºC. In its preparation, the pigeage technique is used to delicately extract the great personality of this variety. Long maceration and pressing in a vertical press at very low pressure.
Aging: 16 months in French oak barrels with lees removal (batônnage) and malolactic fermentation in them, which will end up harmoniously shading its aromatic expression. Bottled without clarifying or filtering.
Varieties: 100% Carignan.

Tasting notes:
· View: Bright cherry colour.
· Nose: Aromatic complexity of acidic red fruits such as raspberries, wild strawberries and cassis liqueur. In its evolution, spicy notes, licorice root and cocoa stand out.
· Palate: Elegant silky tannins in the mouth that culminate in a long, fresh and mineral finish, expressing the identifying granite of its terroir and old vineyard landscape.
Service: Optimal temperature 16ºC – 18ºC
