2233 – WHITE WINE MUSCANDIA DELIRI FLORAL – D.O. PENEDÈS
Characteristics: Fruit of the permanent restlessness that we have at Muscàndia, when we ventured to make our first wine we did it by making a crazy decision: to make a wine and split it in half halfway through gestation, thus achieving, in this way, creating two different ones from the same origin.
Elaboration: The Deliris is a very particular elaboration, where we start with musts of Moscat of small grain and Sauvignon Blanc, originating from the Penedes. They have been fermented together in a stainless steel vat, with a controlled temperature, to preserve all their floral aromas. Towards the end of fermentation, when there are few sugars left, we separate and bottle a part of the must, which finishes the fermentation in the bottle, obtaining a natural sparkling wine, with the Ancestral method. The rest of the wine, is finished fermenting in the tank, and we bottle it with the fermentation completely finished, thus obtaining a calm, clean, aromatic, fresh and floral white wine.
