Description: Silky and clean white agave spirit, with a subtle smoky note and a complex style to enjoy pure mescal at a premium level.Preparation: The base is ripe agave from selected plots. The master blender monitors the ripeness and sugar content. Many batches use Espadín, since the agave shows a clear agave heart. Only the best agave heart goes into the oven.Tradition marks every step. The pineapples are slowly roasted in earthen ovens with wood and stone. This ember provides depth and the noble smoky trail. Then the hearts are crushed with the tahona or gently mechanically. The must ferments in the open air with wood or stone. Wild yeasts from the palenque initiate the fermentation. This is how the mescal shows its terroir.The distillation is carried out carefully in small copper stills. The distiller precisely separates the heads and tails. Only the fine heart remains. A second distillation accentuates the clarity and purity. For bottling it is adjusted with spring water to 40.0% Vol. The mescal rests briefly so that the aromas integrate.
Tasting Notes:
- View: The colour is clear, crystalline and with silvery reflections. In the glass it presents a fine viscosity with soft tears.
- Nose: The bouquet is immediately authentic and full of nuances. Ripe agave leads the aroma. Honey and caramel are placed gently on it. Subtle citrus peels provide freshness. A touch of white pepper provides a spicy touch. A fine smokiness frames the aromas and remains elegant. Vanilla, roasted nuts and a drop of cocoa close the whole. A touch of sea salt and herbs provide depth and balance.
- Mouth: In the mouth the mescal appears silky and, yet, with character. The texture is soft, with good structure. Sweet tones of honey and caramel glide over crisp agave. Lime and grapefruit give a boost. A discreet smokiness sustains the flavour. Pepper and salt tickle the edges of the tongue. A touch of mint and a little toasted agave provide core. The aftertaste is long, warm and finely juicy. Caramel, honey and cocoa remain, along with a pure note of agave. The balance invites another sip.
Consumption recommendations: Serve only at 16 to 18 degrees. Use a shot glass or a slender tasting glass. This shows off the fine texture and subtle smoke trail. A slice of orange with a little worm salt fits in classically. A touch of cinnamon on the skin adds aroma and charm.
