We are so far south that we are bathed in the brilliant spectacle of the southern polar lights, the Aurora Australis. This whisky celebrates the fundamental influence of our unique location. It reveals its complexity in shifting layers of aroma and flavour, as vivid as the Aurora Australis under which it was distilled and aged.

As the gateway to the world’s southernmost wilderness, Tasmania’s unique landscape and cool climate are matched only by the world’s purest water and air. These provide the perfect conditions for viewing the Aurora Australis. The word “aurora” is derived from the Roman goddess of dawn, Aurora.

The name Aurora Australis is therefore a fitting one for this new expression of Hellyers Road single malt whisky, as the distillery enters a new dawn of whisky releases under a new image for the brand. It epitomises the “unique illumination or illumination of light” of the new releases and the distillery’s direction, which perfectly matches Hellyers Road’s unique tradition of being bold and pioneering – continually venturing “into the unknown”, highlighting a new horizon for whisky. Like Aurora Australis, the whisky is illuminating. Delicate flavours of caramel and butterscotch on the palate are brilliantly haloed by notes of fresh meadow herbs, pine and raisins on the nose with a resemblance to charcoal from a campfire.

Tasting Notes:

View: Pale lemon to straw colour. It is described as a “bright” and “vibrant” whisky in the glass.

Nose: Catalan Cream and warm brioche lead the way, followed by butterscotch and vanilla creams. Hints of gingerbread and delicate floral notes add balance.

Mouth: Lush apricots and ripe peaches swirl into a velvety cream, illuminated by bursts of pineapple. A lingering sweetness invites another sip.

Finish: A more flavourful whisky with a medium finish and lingering sweetness.
