7260 – IRISH WATERFORD SINGLE MALT WHISKY BIODYNAMIC LUNA 1.1  50º – 70 Cl.

Characteristics: Mark Reynier, former co-owner of Bruichladdich, founded the Waterford distillery in 2015. With the intention of emphasizing the notion of terroir, he works closely with a hundred Irish farmers. In 2016, he produced the first organic Irish malt distillate and, more recently, following the example of the greatest winemakers, decided to distill a whisky from bio dynamically grown barley.

This bottling is part of the Arcadian series, an unconventional range of organic, biodynamic and heritage distillates. Moon 1.1 is the first whisky made exclusively from biodynamic barley. To do this, Waterford has worked with three Irish barley farmers who practice biodynamic agriculture: Trevor Harris, John McDonnell and Alan Mooney. Waterford growers have adopted biodynamic practices, such as planting seeds according to specific phases of the moon, using horses to plough instead of machinery, and burying cow horns filled with manure at certain times of the year for fertilising benefits. The aim is to produce a living, chemical-free soil.This Moon 1.1 whisky was matured in a combination of 35% first-fill American oak casks, 17% new American oak casks, 26% premium French oak casks and 22% oak casks that had contained natural sweet wine.

Tasting Notes:

• View: Apricot colour.
• Nose: Straight and rich. Plum, apricot jam, fresh fruit salad, iced coffee, lemon cake, milk chocolate and almonds, herbal tea and notes of freshly cut hay, with a pleasant minerality.
• Mouth: Tense, spicy and vegetal. The spices (cloves, white pepper) are present throughout the taste, accompanied by notes of dark chocolate, liquorice, malt and grapefruit, but also vegetal flavors of great originality for a whiskey, such as green pepper, jalapeno or mint tea.
• Finish: Delicate and complex. On the palate, the spicy aroma continues to develop, with a light acidity worthy of great dry white wines.
