 Features: Waterford Single Malt Sheestown Edition is a limited edition Irish whiskey that represents the second release in Waterford’s successful Single Farm Origin series. This whiskey is made from 100% Irish barley grown on a single estate, Sheestown, located on the outskirts of the historic city of Kilkenny. This area has a historical link with the Shee clan, who have settled in the region since the 15th century, which adds an additional layer of tradition to the estate.

The distillation process is meticulous and slow, allowing the characteristics of the terroir of each estate to be highlighted. In addition, the distillery employs an innovative system called the Facilitator, which ensures that each harvest is treated separately and transformed with the highest quality into the final product. This second batch of the Sheestown Edition is characterized by its prolonged fermentation process (120 hours) and an unhurried distillation that respects the nuances of the barley, allowing complex and deep flavours to be released.

In addition, aging in selected oak barrels contributes to the unique expression of the whisky. In terms of its sensory profile, this edition stands out for its complexity and balance between fruity, spicy and sweet notes, creating a unique experience for malt whisky lovers. Waterford Single Malt Sheestown Edition is a clear example of how the Irish terroir, combined with innovative distillation techniques, gives rise to an exceptional whisky that celebrates both tradition and modernity in the art of distillation.

Tasting Notes:

• View: Light and bright golden colour.
• Nose: Aromas of ripe fruit, pastry, citrus, honey and malt, with a subtle touch of hay and spices such as black pepper and cinnamon.
• Mouth: Spicy attack with notes of blood orange, honeycomb, barley sugar and ginger. Hints of vanilla and rounded barley are perceived, with a slight touch of caraway.
• Finish: Long and elegant, where caramel and a subtle hint of melon stand out.
