Characteristics:The Shinobu Distillery, located in Niigata, Japan, is renowned for its natural surroundings and artisanal approach to whisky production. This region is famous for its three white treasures: snow, rice, and sake—elements fundamental to the local culture and reflecting the purity of the water used in distillation.
The name Shinobu means tolerance, evoking the patience and persistence required in the production of spirits. The project was founded by master brewer Ken Usami, a passionate beverage innovator who, before turning to whisky, developed the renowned Niigata Beer, a pioneer in the application of secondary bottle fermentation and beer aging. In 2017, after obtaining the first license to distill whisky in Niigata, Usami began his journey as a distiller, aiming to create a whisky that reflects the richness of the local pure water and Japanese tradition.
The Shinobu distillery is distinguished by its use of Mizunara oak, a highly prized Japanese wood for aging whiskies due to its ability to impart complexity and aromatic depth. This type of oak lends characteristic notes of incense, sandalwood, and spices, giving the whiskies a smooth and approachable sensory profile.
Before the distillery was fully operational, Usami experimented with blending whiskies from different regions of the world to develop a distinctive profile with a Japanese identity. Among its most notable releases, The Shin 15 Years Japanese Pure Malt Mizunara Oak Limited Edition stands out for its meticulous aging process in Mizunara oak casks. This extended aging intensifies the flavours and aromas, offering a nuanced sensory experience where woody, fruity, and spicy notes predominate.

- Nose: Intense aroma of Mizunara oak wood, ripe dark fruits such as blueberry and plum, sweet spices such as cinnamon and a subtle touch of incense.

It evolves in the mouth with layers of spices, highlighting pepper and a subtle hint of dark chocolate. Its finish is long, elegant and spicy, with a fusion of citrus and wood, leaving a warm and persistent sensation.
