Characteristics: Shinobu is a Japanese distillery located in Niigata, a region known for its “three white treasures”: snow, rice and sake. Its name means “tolerance”, reflecting the patience and dedication required to produce a high-quality whisky.

Founded by master distiller Ken Usami, who also created the craft brewery Niigata Beer, this distillery combines innovation and tradition in the production of exceptional whiskies.

The process of making Shinobu whisky begins with the selection of high-quality malts from various parts of the world. These malts are first aged in ex-sherry and ex-bourbon casks, before being refined in Japanese Mizunara oak casks. This process gives the whisky a complex combination of unique flavors and aromas. Shinobu is distinguished by not using colourings or applying chill filtration, which allows the purity and richness of its character to be maintained. Its annual production is limited, and the distillery plans to expand its reserve of Mizunara, bourbon and sherry casks to strengthen its offering of exclusive whiskies.

Shinobu whiskies achieve a perfect balance between bold malt, the sweetness of ripe fruit and the depth of spices. Its organoleptic profile stands out for notes of wood, sandalwood, vanilla, nuts, citrus and a touch of black pepper in the retro taste.

Tasting Notes:

• View: Deep amber colour with golden sparkles, showing its maturation in Mizunara oak barrels.
• Nose: Intense aromas of Mizunara oak, sandalwood and ripe fruit such as blueberries and plums stand out. Sweet notes of vanilla, cinnamon and toasted walnuts are perceived, complemented by a subtle touch of honeysuckle and jellied pear.
• Palate: Smooth and velvety attack with sweet notes of malt and caramel. It evolves towards a spicier profile with the presence of black pepper, cloves and a light citrus touch. The wood, the incense of sandalwood and the freshness of the fruit are balanced, leaving a long, elegant and persistent finish with nuances of dark chocolate and sweet spices.
