Description: Château La Sauvageonne is a legendary place. This Grand Vin draws all its qualities from the combination of two Sauvageonne terroirs, the red sedimentary rock known as “ruffes” and schist, which offer a good water balance to the vines with continuous but moderate stress. This climatic zone presents important thermal oscillations. The distance from the sea and the proximity of the limestone plateau of Larzac bring a certain freshness during the summer nights, which favours the colour of the berries thanks to a slow and progressive ripening. This great red wine is made from a selection of the estate’s best vines, which have developed a natural self-regulation thanks to their good rooting in the stony and clay soil.

Cultivation: Since 2017, the farm has been certified AB (organic wine) and DEMETER (biodynamic agriculture).

Vinification and Aging: Manual harvesting of unproductive vines, based on the control of ripeness, the analysis of the polyphenols contained in the skins and through the daily tasting of the grapes as the harvest approaches. Harvesting healthy and ripe grapes is an essential part of the process of making a Grand Vin. After the harvest, the grapes go into the cellar. The grapes are selected and then destemmed before being placed in barrels at a controlled temperature. Each grape variety is vinified separately. Maceration lasts between 20 and 25 days. At the end of winter, the wines are transferred to new 225 litters barrels for a period of between 12 and 16 months.
