2931 – RED WINE CIGALUS OF GÉRARD BERTRAND – WINES OF FRANCE

Vinification and Aging: Since the autumn of 2002, part of the vineyard has been grown bio dynamically. For yield control (25 hl/ha): vines over 15 years old, without nitrogen mineral fertilisation. Pruning in short Royat cord and harvest in green. and optimal ripening: perfect health status (grapes selected if necessary), classic ripeness control (duplicated by polyphenol analysis), daily tasting of the grapes from each plot to activate the harvest. After alcoholic fermentation and before malolactic fermentation, the wines are placed in new 225 litters barrels. A selection of barrels is used to adapt the choice of wood and type of roasting for each vintage. The wine is in the bottle for at least one year before sale.

Tasting Notes:
- View: Intense ruby colour with mahogany reflections.
- Nose: The aroma calls to concentrated and very ripe black fruit, toasted spices and toasted oak.
- Mouth: In the mouth it is exuberant and opulent, with velvety tannins. Aromas of black fruits -blackberries, black cherries and plums- reappear, with a complex and empyreumatic structure that leads to mint. The finish is long and perfectly balanced.
Pairing: Roasted red meats, poultry with sauce or aged cheeses.
Service: It is served at a temperature of 16 °C.
