2806 – EMBRUIX OF VALL LLACH 2020 D.O.Q. PRIORAT
Characteristics: It is made with grapes from vines that mostly do not reach the age of 30 and planted on the Winerys’s properties. They are vineyards of Samsó, Garnatxa, Cabernet, Merlot and Syrah, from estates spread over a very extensive geography, at various altitudes and topographies, and in which the insolation comes from the whole Rosa dels Vents. With these variables and the presence of licorice, Vall Llach’s Winery obtains a must of great structure and complexity that allows the production of Embruix.
Vinification: Fermentation of the destemmed grapes in stainless steel tanks of 2,500 and 5,000 liters capacity at a controlled temperature between 25º and 29ºC over 17 days. Daily sinking and soft rises. 12-day post-fermentative maceration followed by gentle pressing. Malolactic fermentation takes place in stainless steel tanks.
Aging: Aging for 8 months with a traffic in 225 and 300 liters barrels of third and fourth year French oak and light and medium fine grain toast.
Varieties: 32% Grenache, 26% Syrah, 21% Merlot, 15% Samsó and 6% Cabernet Sauvignon
Graduation: 14.5% Vol.
Capacity: 75 Cl.
· View: Cherry colour with violet rim.
· Nose: Aromas of ripe black fruit (black plums) and spices (black pepper and cloves) accompanied by smoky notes and dry grass.
· Mouth: Fruity, tasty and powerful, with dry but mature tannins.
Service: It is recommended to serve it at a temperature of 16 ºC.
Pairings: ‘Steak tartar’, scrambled mushrooms and ‘foie’ and duck ‘confit’ in orange.
