2634 – BURBULLAS OF SANTIAGO ROMA ALBARIÑO SPARKLING BRUT NATURE OF THE D.O. RIAS BAIXAS
Characteristics: Made with 100% Albariño mono-varietal with good organoleptic balance, with meticulously selected grapes. Destemming, pneumatic pressing, controlled fermentation at 18 ºC and subsequent racking to separate it from the lees and thus obtain the base wine. It is then racked and a second fermentation in the bottle at a controlled temperature of 14 ºC which, after a minimum period of nine months in the bottle, will cause the appearance of the bubble. Subsequent disgorging in which the expedition liqueur will be added.

Denomination of Origin: The D.O. Rías Baixas produces excellent white wines, characterized by the fruity and floral aromas derived from the Albariño grape, of international recognition.
Alcoholic Content: 12,5% Vol.
Bottle Type and Capacity: Smoked standard 75 Cl.
Tasting Notes:
- View: Yellow with olive reflections, bright and satiny. Fine bubbles that form a constant rosary.
- Nose: Subtle complexity, exhibits floral, fruity and vegetal aromas with a predominance of acacia flower, linden flower and fresh grass. When shaken, it presents notes of magnolia flower and reminiscent of brioche, along with nuances of thousand-flower honey. Brushstrokes of stone fruit and white flesh seed. Finish with a light caramelized background.
- Mouth: Lively and elegant attack on the palate, with a lot of breadth, floral flavors and some minerality. The body evokes nuts and just acidulous notes of grapefruit. Soft and well-integrated carbonation, balanced acidity and intense finish.
Pairing: Sparkling wines pair perfectly with fish, seafood, cheeses, foie, white and feather meats but also with fattier foods such as Iberian ham.
Service: It is recommended to serve it at a temperature of 6 ºC.
