Characteristics: Mono varietal of Grenache Black made so that the grape is expressed in all its magnitude during the tasting. It has a subtle and fruity nose but in the mouth it shows all the strength of the variety. During fermentation, a daily bleeding is carried out to preserve the primary aromas and then it ages for 14 months in partly new and mostly multi-use barrels so that the wood does not take center stage. A wine with lots of red fruit, violets, balsamic aromas and spicy touches.

Vinification: Peeled. Cold maceration. Fermented in stainless steel tanks with a maceration of 20 days. During fermentation, a daily indentation is carried out to preserve the primary aromas typical of the variety, which is carried out at 15 ºC and at night it is incorporated into the skins, which have a higher temperature. In this way, a thermal contrast is produced that improves the extraction of polyphenols and aromatic compounds. The malolactic fermentation is carried out in 400 and 500 litters barrels.

Aging: 6 months in 3rd year French oak barrels.

Tasting notes:

View: Intense ruby ​​red colour with violet rim. Medium – high layer.

Nose: On the nose it presents aromas of red fruits such as strawberries, black fruits, it has very marked floral notes of violets, when the wine oxygenates, the balsamic and spicy aromas appear.

Mouth: The entry in the mouth presents a fine and well-integrated tannin, very good acidity, balsamic notes where mentholates and fresh eucalyptus stand out, it is intense, complex and with good persistence

Pairing: Perfectly accompanies lamb, entrecote, red meats are excellent dishes for this wine. Easy to pair with pastas and pizzas as well as baked vegetables and cheeses.

Service: It is recommended to serve it at a temperature between 16 and 18 ºC. We recommend decanting it before serving.
