Description: Missenyora is the name formerly given to the abbesses of the Vallbona monastery. The blue colour that dresses this bottle evokes the ceramics that the nuns painted in one of their various manual jobs. In this way we honour a past that is often still present to us: when we plow “La Vinyeta de Missenyora” or “La Plana”, the vineyards closest to the monastery, remnants of this still emerge, like a find blue glazed ceramic.

Viticulture: Ecological Agriculture. Certified organic dry land viticulture. Manual harvest and press with whole grain and turnips. The wine ferments at a controlled temperature (15-17ºC) in American (80%) and French (20%) oak barrels, with a percentage of new wood that never exceeds 15% to respect the varietal character of the Macabee. We do the aging on our own lees with weekly battonage to increase the volume in the mouth. Before bottling, we add, depending on the taste, a quantity of concentrated grape must that gives the wine its poured character that makes it delicious and original.

Tasting notes:

· View: Pale yellow colour.

· Nose: The nose is intense and complex, with aromas of white fruit and bear fruit (peach, orellana). Lactic notes and a spicy point of white pepper stand out.

· Palate: On the palate it is unctuous, creamy and with a hint of sweetness. Fresh entry and a good persistence in a wine that invites to be paired with cold starters, such as canapés based on pate or escalivada.

Pairing: Ideal as an aperitif. Also Washed rind cheeses, Fish rice and Mild Asian cuisine.

Service: It is recommended to serve it between 8 and 10 ºC temperature.
