2134 – RED WINE TEMPUS – D.O. TERRA ALTA
Characteristics: The grapes used by Tempus come from vines more than 30 years old located in two small estates with very low production, located in the town of Batea. The grapes are harvested entirely manually and transported in small boxes, in order to preserve the quality of the grapes and prevent them from breaking.
Vinification: When it reaches the cellar, the Tempus grapes macerate for 22 days in stainless steel tanks. Later, in the same containers, a fermentation process is carried out with the skins at a controlled temperature. The aim is to make the wine structured and complex.
Aging: After the various stages of vinification, Tempus rests for ten months in French oak barrels. Before being marketed, it ages for around a year also in the bottle.

Tasting Notes:
- View: Red wine with an intense colour, with purple hues.
- Nose: Aromas of raspberries and black plums or fruit in liquor; notes of vanilla and cocoa, with spicy notes of cloves.
- Mouth: In the mouth it is gentle and fleshy, with a good level of acidity – offset by the warmth of the alcohol – and pleasant tannins. Long and persistent finish
Pairing: Spiced red meats and cured cheeses.
Service: It is recommended to serve it at a temperature of 16 ºC.
