2524 – RED WINE CIGONYES – PERALADA D.O. EMPORDÀ
Characteristics: Since Miguel Mateu acquired Peralada Castle in 1923, three generations of the Suqué Mateu family have worked to demonstrate that the privileged geo-climatic conditions of the Empordà, thanks to its proximity to the Mediterranean and the extraordinary heterogeneity of the their soils, were suitable for obtaining elegant wines, with structure and marked personality. A tradition that has its origins in the 14th century, when the Carmelite monks who lived in the monastery attached to the castle already produced an excellent wine with which they supplied the entire region. This is how the cellars of Castle de Peralada were born and because for three generations the desire to show the winemaking tradition of the Empordà has been maintained. Currently, Javier Suqué Mateu, grandson of the founder, is in charge of keeping this spirit alive.
Aging: Three months in Bordeaux barrels of fine French Allier and American oak.

Tasting notes:
· View: Violet colour of medium layer.
· Nose: Aroma of acidic red fruits, rounding off with a discreet combination of fine barrel aging notes.
· Mouth: In the mouth it is balanced, long, savoury and fresh. It has tannins present, very rounded. It is a silky, persistent wine with an evolving and gentle finish.
Pairing: White meat, red meat, fish and vegetables.
Service: Optimal temperature 16 ºC.
