2521 – RED WINE GRESA 2016 VINYES D’OLIVARDOTS D.O. EMPORDÀ

 

Characteristics: Sandstone/granite (Sandstone) (elegance): Grenache, Syrah and Cabernet Sauvignon, driven in a lyre system in order to increase the surface area and leaf exposure, obtain maximum photosynthetic function and, therefore, a complete maturation of the grape. Slate (minerality): Old Carinyennes with maximum productions of 1 kg/vine.

Harvest and elaboration: Manual collection in 10 kg boxes, carrying out a first selection in the vineyard and a second grain-by-grain selection table in the cellar. Cold pre-maceration (4ºC), vinification with combined fermentation in stainless steel vats and French oak foudres, at a controlled temperature of 26ºC and long maceration. Pressed with a vertical press at very low pressure. Aging for 14 months in French oak Bordeaux barrels, combining fine and extra fine grain for added complexity, and enhanced by the removal of its lees (bâtonnage) during much of its aging.

Viticulture: We practice ecological viticulture under the principles of biodynamic, through rigorous manual work in the vineyard and focusing our efforts on the recovery of native varieties.Bottled in July 2018 without filtering or clarifying.

Varieties: Carignan (40%), Grenache (35%) and Syrah (25%)

Alcoholic Degree: 14.5% Vol.

Capacity: 75 Cl.

Tasting notes:

· View: Bright cherry colour.

· Nose: Aromas of black fruit, ripe cherry, mineral notes on a background of balsamic and aromatic Mediterranean herbs.

· Mouth: In the mouth it is intense, unctuous, gluttonous, voluminous, fruity with a marked acidity and with a velvety, fresh and long tannin.

Service: Optimal temperature 16ºC – 18ºC
