Features: The Carbon Champagne Sleeve Carbono Effect BDB (Blanc de Blancs) Millésimé 75 Cl is one of the jewels in the crown of this maison. Unlike other models that combine red and white varieties, this is a Blanc de Blancs (made exclusively with white grapes, Chardonnay) and, in addition, it is Millésimé (with vintage), which means that it is only made in years of exceptional harvests.Presented with the spectacular coating that imitates carbon fiber (often with silver or white details), it is a champagne of extraordinary finesse, purity and aging potential.

Aging: Being a high-end Millésimé, its aging in rhymes in underground cellars is very long, usually exceeding 6 or 7 years (and sometimes more). This allows the Chardonnay to reach its maximum buttery complexity without losing its freshness.
Grape variety: 100% Chardonnay, mainly from vineyards classified as Grand Cru and Premier Cru (such as those of the prestigious Côte des Blancs).
Tasting notes:
- View: In the glass it shows a pale golden colour with beautiful reflections and light green tones, typical of high-quality Chardonnay. The bubble is microscopic, extremely fine, which rises in delicate threads very slowly and harmoniously, creating an elegant and persistent crown.
- Nose: The nose is a spectacle of high precision, freshness and mineral elegance. Intense notes of ripe citrus fruits (lime, orange peel) and white flowers (acacia, hawthorn). The aromas of its long aging and the evolution of the vintage quickly make their way: memories of brioche just out of the oven, salted butter, toasted almonds, hazelnuts and a touch of white honey. It stands out with a very marked mineral character, almost calcareous and saline, which recalls the pure clay soil from which the grapes come.
- Mouth: The entry is straight, direct and of crystalline purity. The texture is of absolute finesse, almost like silk or lace, with a carbonation that melts subtly. On the palate it is wide, creamy and deep. The acidity is vibrant and vertical, typical of Chardonnay, which gives it incredible energy. Citrus and white fruit flavours blend with hints of bakery and nuts. The finish is long, very persistent, marked by absolute cleanliness, great citrus freshness and a salty and mineral aftertaste that lasts for minutes.
Recommended Pairing: This Blanc de Blancs Millésimé is a high-flying gastronomic champagne. Its vertical acidity and its aging complexity make it ideal for refined dishes with pure flavours:
- Great Seafood: It is the perfect pairing for naked Gillardeau oysters, a king prawn or sea ox tartare, and a steamed lobster with white butter (beurre blanc).
- Caviar: One of the most classic and exclusive pairings in the world. The salinity and fat of caviar are divinely complemented by the acidity and mineral character of this Millésimé.
- Noble white fish: Ideal to accompany sole a la meunière or baked turbot with a mild white truffle sauce.
- Long-matured cheeses: It contrasts excellently with hard and old cheeses, such as a Parmigiano Reggiano aged for more than 36 months or a cured Comté cheese.
