Features: Waterford Organic Gaia 1.1 is the first Irish whiskey made exclusively from certified organic barley, paying tribute to Gaia, the goddess of Mother Earth. It is part of the Arcadian series, a collection that reflects Waterford’s commitment to sustainable production and the expression of terroir in each harvest. This whiskey is made from barley grown by six farmers committed to organic farming: John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris.
The variety used is Ouverture, fermented with Mauri distillery yeast for 136 hours, an extended fermentation time that highlights the aromatic complexity and unique character of the distillate. Distillation takes place at the innovative Waterford distillery, located on the southeast coast of Ireland, using cutting-edge technology and practices inspired by oenology. Maturation is carried out in a combination of American and French oak barrels, as well as sweet wine barrels, for a period of 3 years, 9 months and 20 days. This process brings multiple layers of flavour and depth to the whiskey.
Waterford Organic Gaia 1.1 is a limited edition, with a production of 24,000 bottles, making it an exclusive piece for whiskey collectors and lovers. The distillery plans to expand its line of organic whiskeys with Single Farm Origin versions, delving even deeper into the exploration of terroir.
Tasting Notes:
- View: Golden honey colour.
- Nose: Aromas of orange zest, malted figs, seaweed, hay, salted caramel, mint, rose water and freshly turned earth.
- Mouth: It is warm and spicy, with nuances of clove, figs and an unctuous texture that dries on the palate. Notes of cherries, caramel, pears, malt and layered spices, culminating in a sweet and lingering retro aftertaste.
