2572 – RED WINE VALL DEL CALÀS OF CAPÇANES – D.O. MONTSANT

 

Characteristics: Vall del Calàs is a red wine from the D.O. Montsant produced by Celler de Capçanes, a winery that was born from a cooperative that was founded in 1933 thanks to the union of several families who lived in Capçanes. In the past, they were dedicated to selling large volumes of wine in bulk until in 1991, with the entrance to the cellar of winemaker Angel Teixidó, the first wines in barrels were made.

Vinification: Fermentation at controlled temperature (27-29ºC). Maceration: 14-20 days; the two varieties have been vinified separately. Malolactic fermentation in tank. Soft filtered and without cold stabilization.

Aging: Aged for 12 months in new French oak barrels and 3 months in tank before bottling.

Varietals: 85% Grenache and 15% Carignan

Tasting Notes:

· View: Ruby red colour with purple rim.

· Nose: Intense on the nose, liquorice and wood notes appear. There are notes of ripe red fruit accompanied by spicy, toasted and balsamic touches. Memories of liquorice, plums, cinnamon and cocoa. Subtly mineral background.

· Mouth: In the mouth it is warm, fleshy and pleasant, leaving an intense sensation of fruit. Good balance between tannins and acidity. Long and persistent finish.

Pairing: Lamb, entrecote, wild animal meats are always welcome with this wine. Simpler dishes such as pastas, pizzas and vegetables are also good pairings suitable for the Vall del Calàs.

Service: It is recommended to serve it at a temperature of 16 ºC. We recommend decanting it before serving.
