Characteristics: SO Pansa Blanca is a young wine from the Masia Can Roda winery, located in Santa Maria de Martorelles, Vallès Oriental (Barcelona). It is a white wine made with the star grape variety of DO Alella: Pansa Blanca (or Xarel·lo in the Penedès). So Pansa Blanca is grown in vineyards close to the winery, which have saulón soils, the typical terroir of DO Alella, characterized by having sandy soils that easily absorb water and that give an extra freshness to the wines. Elaboration: Manual harvesting in boxes of 15 kg capacity, soft pressing in a pneumatic press and exclusive use of the flower must and the soft pressing fractions up to 0.6 atm pressure. Static removal for 36 hours at 12ºC and subsequent alcoholic fermentation at a controlled temperature of 16ºC for 20 days. The wines are then decanted, clarified and filtered before bottling.

Tasting Notes:
· Colour: Pale and bright yellow wine, green-grey reflections and light tear.
· Nose: Intense and fragrant on the nose, fresh and varietal aromas of fruity memories appear such as pear, peach and a touch of green banana, Mediterranean plant such as fennel and undergrowth, salt and smoky minerals.
· Palate: Fresh and slightly fatty, long and medium-structured palate, with citrus acidity and hints of citrus fruits such as lime and grapefruit, markedly salty and slightly bitter aftertaste.
Pairing: It is perfect to eat with the said products as a canapé, for example. You can also accompany potatoes, croquettes, fish rice or clam dishes.
Consumption temperature: We recommend serving it at a temperature between 7ºC and 10ºC.
