 Characteristics: New vintage of the Exibis La Rasa wine born from the winemaking project of the Can Serra winery of the Exibis Viticultors, pioneers in the region in applying biodynamic concepts to an ecological and sustainable agricultural activity.

Vinification: The harvest is done by hand and, once in the cellar, the grapes are refrigerated throughout the night. Fermentation of the destemmed grapes is carried out in open tanks at 25ºC, with the cap sinking and without racking. The macerations last between 6 and 8 days. After these processes, the red wine Exibis La Rasa 2018 rests for 12 months in light toasted first and second year French oak barrels, before being bottled.

Designation of Origin: D.O. Pla de Bages

Varieties: To make it, a blend of 60% Cabernet Sauvignon, 20% Sumoll and 20% Mandó has been chosen, coming from vineyards grown in the Navàs area, within the DO Pla de Bages on wide terraces at 500 meters of altitude . The vines are rooted in a Mediterranean-continental climate with clay-limestone soils.

Tasting Notes:

· View: It has a garnet hue with reddish hints, medium-high layer. It forms a marked, visibly colored tear in the glass.

· Nose: Complex and mature aromatic expression. Upon opening, this blend of Cabernet Sauvignon, Sumoll and Mandó offers a clear definition of red fruit, cherries and wild fruits sheltered by mountain sensations, withered flowers and dry moss and leaf litter. Little by little, the sensation of fruit is increasing, showing in the background notes of toast, balsamic and minerals, characteristic of the terroir.

· Mouth: Sensations of volume, fleshiness, complex palate and remarkable structure. His step is light although at the same time it denotes body. This wine from the Can Serra dels Exibis Viticultors winery has a fresh acidity that extends the journey between sensations of musty flower and light toast, with a ripe red fruit on the palate that is not as present as on the nose. Vibrant, tasty tannins, still somewhat drying, which leave us with a fresh, soft finish, with floral and very light toasted aromatic returns.

Pairing: In general tasty and intense dishes. Meats of all kinds, especially red meat and stewed or roasted meats. Intense and tasty meat or red wine sauces. Especially recommended with grilled food. Season the dishes with sweet spices, spices, Mediterranean herbs and, if they are a little evolved, with mushrooms. Pasta with powerful sauces like a beef Ragú. Meat rice, intense and tasty.

Consumption temperature: The optimal service temperature is 18ºC. The intense expression of this aged red wine from Pla del Bages forces us to open it about 20 minutes before serving for a greater expression of the aromas and flavours.
