Description: Long-aged cava (10 years). It stands out for being a single-varietal xarel·lo, from a single vineyard of less than one hectare. With complex aromas and extraordinary delicacy, its texture in the mouth seduces at first, showing itself lively, creamy and with a marked minerality, ending with a long and persistent aftertaste. A brilliant and brilliant product that is hard to forget.

Tasting notes:
- Bubble: Very fine, delicate and perfectly integrated bubbles, more sensory in texture than visual. It provides creaminess and a feeling of lightness without being aggressive, reinforcing the elegance of the wine and underlining its serious and meditative character more than its festive facet.
- View: Bright golden yellow colour, with reflections between straw colour and slightly amber, which denote evolution and concentration. Clean, crisp and with a fine tear that accompanies the movement in the glass, anticipating structure and volume.
- Nose: Complex and deep nose, with notes of ripe white fruit, citrus peel and memories of apricot pine nuts. Hues of fine bakery, brioche and fresh butter intertwine, along with notes of toasted nuts, dried flowers and a clearly mineral, almost chalky background, which reinforces its unique vineyard character. With aeration, notes of Mediterranean herbs, light honey and a delicate smoky touch appear.
- Mouth: In the mouth it is dry, tight and very structured, with a vibrant acidity that sustains the whole and extends the journey. The sensation is broad and enveloping, but always precise, with a creamy texture that combines with a marked salinity and a long, deep and slightly bitter finish, very elegant. Memories of ripe fruit, nuts, toast and chalk last for several seconds, clearly inviting to the table and to haute cuisine pairings.
Pairing: It is an essentially gastronomic Corpinnat that pairs well with both raw ingredients and elaborate dishes. Sushi, paellas and risottos, as well as Iberian ham, foie gras and mature cheeses. At the table, it is a great ally of shrimp, prawns, octopus… Fish such as turbot, sole or tuna tartare harmonize perfectly.
Service: In order to enhance the structure and creaminess of this wine, we suggest serving it between 8°C and 10°C and drinking it in a wide-mouthed glass to promote oxygenation.
