1240 – CAVA ORIOL ROSSELL – RESERVATION OF PROPERTY
Characteristics: Iconic Cava of the winery, single varietal of Xarel·lo. The grapes are from the old vineyard of Les Cerveres, planted in 1974 and from calcareous soil with a loamy-clay texture.
Elaboration: Manual harvest in 20 kg boxes and grapes chosen on a selection table. Draw with cork. Fermentation and aging for six months, from 10% of the grapes, in 300 litters French oak barrels. Rinsed with desk and decapitated manually.
Variety: 100% Xarel·lo
Aging period: A minimum of 60 months
Sugar: Residual, brut nature.
Graduation: 11.5% by Alc.
Tasting Notes:
- View: Pale yellow colour, with golden reflections, crystalline, with a rosary of fine and constant bubbles.
- Nose: Smell with high aromatic intensity. Initially, the aromas of white fruit and pineapple stand out, which are combined with fresh balsamic notes. Finally, pastry notes stand out, giving it an intense complexity of fragrances.
- Mouth: The entrance to the mouth is smooth, with the carbonicity well integrated, broad and fresh. The aromas of tropical fruit are found there, with balsamic references and specific notes of dried fruit. It is a round cava with volume and a long, creamy and persistent finish.
Pairing: Appetizers, ham, seafood, rice, white fish, poultry, white meat, small game, marinated meat and nuts.
Service: Serve at a temperature of between 6 and 8 ºC.
