2684 – WHITE WINE MATSU LA JEFA – D.O. VINO DE TORO

The Vineyards: In Toro there are very few parcels where white grapes predominate, so La Jefa comes from a selection of a multitude of white vines found in old vineyards (from 50 to 150 years old), among the majority black grapes. They are located on poor land, in sandy soil with a high stony and granitic component and are cultivated naturally as marked by the Torres tradition.

Elaboration: Elaboration with minimal intervention. Maceration with the skins for 4 hours, soft pressing and static removal. Spontaneous fermentation with indigenous yeasts in new 600 litters French oak barrels, where it remains in contact with the lees.

Aging: 14 months in “bocois” (large barrels) of new French oak of 600 litters, with light toasting.

Varieties: Malvasia and other varieties.

Tasting Notes:

• View: Straw yellow colour, of medium intensity, very bright and with grayish reminiscences.
• Aroma: Of great complexity, notes of vanilla and ripe seed fruits stand out, accompanied by creamy notes. It is complemented with light aniseed nuances, to reflect a nose harmonized by its aging in foudres, with a sweet character and a great diversity of nuances.
• Taste: A very enveloping and glyceric wine, with a lot of creaminess and very pleasant. But at the same time with good acidity, resulting in a very balanced and elegant wine. Very pleasant on the palate, where the sweet nuances stand out and a fine texture that increases its complexity and richness.

Pairing: Ideal to accompany some Chinese noodles with prawns, white meats and fish; but it is also a good partner for poultry pâtés or sea and even mountain rice. It is better not to serve it excessively cold. It is suitable for vegans.

Service: It is recommended to serve it between 9 and 11 ºC.
