2650 – RED WINE SES NINES SELECTION 07/9 – D.O. BINISSALEM MALLORCA

Characteristics: The Ses Nines wine label illustrates the mother as a child playing in the street of her native town, Consell. One of these villages with a wine-growing tradition, in the Raiguer area, which suffered the devastating effects of phylloxera at the end of the 19th century. Due to this, the vine crops were transformed into almond crops but this wine growing tradition never disappeared in the farming world. Already in the middle of the 20th century there was a reactivation of the wine sector thanks to the efforts of the island’s winegrowers and vintners.

Production: Manual harvest in 12 kilo boxes. The grapes are cooled for 12 hours in a cold room. Each vineyard is vinified separately. Fermentation at a controlled temperature with periodic rackings and deletages. Only vin flor is used to fill the French oak barrels. After 12 months of aging, the best barrels from Ses Nines are selected and a blend is made for the 07/9 selection.

Grape varieties: 40% Black Mantell, 21% Syrah, 19% Merlot, 18% Callet and 2% Cabernet Sauvignon.

Tasting Notes:

• View: Garnet-colored wine of medium high layer with purple rim.
• Aroma: The nose is intense with aromas of red fruit in liquor and balsamic notes.
• Taste: In the mouth it has medium acidity, integrated alcohol and a very ripe tannin. in the aftertaste ripe red fruit and spices appear.

Pairing: Red meat stews, Roast Beef.

Service: It is recommended to serve it between 16 and 18 ºC.
