Characteristics: The Kujira Kyojin Japanese Whisky Single Grain American Oak is a unique artisanal spirit produced in Okinawa by the historic Masahiro Distillery. Its key distinguishing feature is that it is not made from barley or maize, but from 100% premium Indica rice, fermented with the native black koji fungus.
- Raw material: Indica long-grain rice.
- Fermentation: Use of black koji, a traditional ingredient in the ancient spirit Awamori.
- Maturation: Aged for 3 years in new Virgin American Oak casks.
- Aging Climate: Okinawa’s warm, humid subtropical climate drastically accelerates the interaction with the wood, achieving a deeper and faster maturation than in temperate climates.
Tasting Notes:
- View: A bright yellow colour with beautiful golden hues from its time in virgin oak.
- Nose: A sharp and sweet aroma. Standout floral notes of rose and fruity hints of white peach emerge. Creamy layers reminiscent of chocolate, cocoa, vanilla and homemade caramel are apparent, alongside a slight earthy touch from the rice.
- Palate: Very smooth, silky and velvety on the palate. It is exuberant, with a sensation reminiscent of patisserie. Flavours of tropical fruits (such as pineapple and pear), nuts and a subtle caramel sweetness, balanced by the woody character of cedar, stand out.
- Finish: Round, smooth and long-lasting. It leaves a lingering aftertaste of wood sugars, subtle baking spices (cinnamon) and a slightly toasty character provided by the char on the cask.
