The Bottle (Real Fiber): One of the most exclusive packaging in the world. Real carbon fiber protects the wine absolutely against light and temperature changes, allowing for perfect preservation. Each bottle requires a week of artisanal work and 21 high-precision steps. Inside is an absolutely exceptional collector’s champagne.
Variety and Origin: 100% Chardonnay, from the best vineyards classified as Grand Cru (such as those of the legendary Côte des Blancs).
Aging: Aged in rhymes in underground cellars for an extremely long period (usually between 7 and 10 years depending on the vintage), developing an unparalleled complexity.
Tasting notes:
- View: Bright golden colour with elegant light green reflections. The bubble is literally tiny, forming a continuous cord and a very fine crown that remains in the glass impeccably.
- Nose: Of sublime precision and elegance. Notes of candied citrus, white flowers (acacia) and mineral chalk stand out. It quickly opens up to rich aromas of fine pastry, nut butter, toasted hazelnuts and a subtle touch of white honey.
- Mouth: The attack is straight, crystalline and overwhelmingly pure. The texture is incredibly silky, almost airy, where the carbonation is completely melted. It shows a vertical and vibrant acidity that runs across the palate with energy, giving way to flavours of brioche and lemon peel. The finish is eternal, very clean and marked by a captivating mineral salinity.
Recommended Pairing: This champagne is a true monument that calls for haute cuisine dishes with a great purity of flavours:
- The best Caviar: The pairing par excellence. The minerality and acidity of Blanc de Blancs cut the greasy sensation of caviar (Beluga or Oscietra) and enhance its marine flavour.
- Haute Cuisine Seafood: Sublime with Gillardeau-style naked oysters, a carpaccio of crayfish with a touch of lemon, or steamed lobster with white butter (beurre blanc).
- Noble Fish: Wonderful pairing with a wild baked turbot, sole in traditional la meunière or black cod.
