1298 – CORPINNAT JUVÉ & CAMPS RESERVE OF THE FAMILY
Characteristics: Reserve of the Family is our most emotional cuvée. It is the wine we create to drink at our gatherings, with which we have toasted, eaten and shared tables so many times. It is also an icon among long-aged sparkling wines that was the great ambassador of brut nature and marked a before and after in the history of our sparkling wines. Made with the trilogy of white wines from Penedes, Reserve of the Family embodies what we are as a house of sparkling wines, from the vineyard to the glass.
Vinification: Soft pressing to obtain the flower must. Static cold settling. First fermentation in stainless steel tanks at a controlled temperature, separating varieties. After the base wine is blended, the second fermentation begins in the bottle with concentrated must. Minimum aging of 36 months in the bottle. Without adding expedition liqueur.
Cellar: Juvé & Camps of the DO Corpinnat
Varieties: 50% Xarel·lo, 35% Macabeu and 15% Parellada
Graduation: 12% Vol
Tasting notes:
- Colour: bright yellow with golden reflections. A delicately persistent pearl essences, faithful to the long aging.
- Nose: elegant and precise, with a clear aromatic expression where the fresh fruit gives way to a riper apple, accompanied by intense notes of fennel and other aromatic Mediterranean herbs, such as rosemary. The nuances of the aging are added, with memories of lightly toasted bread and nuts.
- Mouth: combines freshness, complexity and opulence. The bubbles are fine, perfectly integrated and envelop the palate with its creaminess. The attack is vibrant and dry, characteristic of its brut nature style. It ends with a fresh and expressive persistence, supported by a balanced acidity that prolongs the memory and provides depth and tension.
Pairing: Perfect with acorn-fed Iberian ham, but also with an excellent counterpoint of a vichysoisse with toasted almonds, a suckling pig with apple puree and a camembert cake with walnuts.
Serving: We recommend storing it at 15ºC to preserve its properties. We advise opening the bottle a few minutes before consuming and tasting between 8 and 10ºC in a flute-type cava glass.
