1295 – CORPINNAT RECAREDO RESERVE PARTICULAR GRAN RESERVE
Characteristics: Recaredo Reserve Particular is one of the great references of Corpinnat, a sparkling wine with a very gastronomic profile, with a strong character of autolysis, depth and an extremely integrated bubble. Coming from a winery that pioneered long aging and demanding viticulture, it shows a serious, dry and tense style, designed for the table more than for the informal aperitif. Its combination of notes of fine bakery, ripe fruit and mineral background places it among the most prestigious classic sparkling wines of the Penedes.
Description: Josep Mata Capellades, with the complicity of his sons José and Antonio, created the Recaredo Reserve Particular in 1962 with the original idea of transmitting the delicacy and subtle complexity that a great cava with long aging can achieve. older vines of xarel·lo and macabee. Mineral and complex, full of inner life and long finish. Brut Nature totally dry, without the addition of expedition sugar. It is recommended to taste it at 10ºC and open the bottle a few minutes before serving

Tasting notes:
- Bubble: Very fine and delicate bubbles, with a constant rise but not at all aggressive, integrated almost as a silky texture rather than as a separate element. It reinforces the sensation of creaminess in the mouth and helps to maintain freshness, without ever dominating the whole, which is characteristic of the best long-aged Corpinnat.
- View: Intense golden yellow tone, with slightly amber reflections that denote long evolution in the bottle. Bright and clean, with a fine and slow tear that reinforces the sensation of concentration and structure.
- Nose: Very complex and deep, dominated by autolysis: fine toasted bread, delicate pastries, brioche, nuts and touches of hazelnut butter. Notes of ripe white fruit, candied citrus peel, roasted apple and nuances of light honey appear. The background is markedly mineral and earthy, with memories of wet chalk, dried Mediterranean herbs and a subtle smoky echo that provides a greater sense of seriousness.
- Mouth: Dry and precise entry, with a notable structure but perfectly balanced by a still lively acidity that extends the journey. The mid-palate is enveloping, creamy, with layers of flavours ranging from ripe fruit and dried citrus to fine pastry, nuts and a very sharp salty touch. The finish is very long, with a retro bakery taste, toasted almonds and marked minerality, clearly inviting haute cuisine pairings, especially with noble fish, prepared seafood and poultry.
Pairing: Rice, Cold cuts, Mature cheeses, Pasta, Nuts.
Service: In order to enhance the structure and creaminess of this wine, we suggest serving it between 8°C and 10°C and drinking it in a wide-mouthed glass to promote oxygenation.
